Banana Muffins...

Have been into the "baking" mood lately.. Hehe.. Last week baked chocolate muffins (but forgot to take pics, will upload if I ever baked that again).. Yesterday baked some Banana Muffins. I was thinking what can I do with the basic muffin receipe, so I decided to try and have a go at it..

The recipe of the basic muffin recipe is as follow...

Muffins – Basic Recipe
Ingredients:
(basic recipe for 1 portion of muffin mixture – makes about 12)
• 75g butter (SCS brand is recommended)
• 75g sugar
• 100g self-raising flour
• ½ egg, beaten with ¼ teaspoon vanilla essence
• Milk (either evaporated or fresh milk)
• Pinch of salt
• Cupcake cases
• Oven temperature - 190℃

Method:
1. Preheat oven to 190℃. Sieve the flour and salt together and leave aside.

2. Place butter & sugar in a mixing bowl. Cream till mixture becomes light & fluffy – a slightly lighter yellow colour.

3. Blend in the egg- adding a little at a time. Stir to mix quickly to prevent curdling.

4. Fold in the flour and mix well.

5. Add milk to a desired soft-dropping consistency.

6. Place mixture in cupcake cases till ¾ full (place cupcake cases in those chwee kuey or egg tart moulds to hold the shape).

7. Leave to bake in oven for about 15 – 25 mins or until top turns golden bro
wn (different ovens’ temperature may differ, and may cause the baking time to differ slightly)

Using the same basic mixture for…
Chocolate Muffins – add in 1 rounded dessertspoon of cocoa powder and sieve with the flour. Add in preferred amount of chocolate chips to the mixture .

Banana Muffins – mash 1 banana, add in a few drops of lemon juice to mixture. Crushing banana nut crunch cereal and add in mixture is also recommended, but optional – it enhances the taste though..
